Ghee Glazed Roasted Carrots

Our sweet honeybee ghee blends are great blended into coffee for an herbal (and flavor!) frothy boost, spread on toast, folded in baked goods, as frosting, or stuffed into a date. Their endless uses are confirmed by customers, like Corinne of Late Bloomer Ranch, who shared this recipe idea and said her family enjoys Stoke roasted carrots weekly! The earthy sweet flavor of carrots is perfectly complemented by the warmth of our Stoke ghee, which is infused with orange peel and clove, then whipped up with Ceylon cinnamon, ginger, and raw local honey. This side dish is wonderfully supportive to the digestive system, and will delight the senses, too!

Ingredients:
⋒ 5 carrots 
⋒ 1-1.5 tbsp Stoke ghee 

Preparation Method:
⋒ preheat the oven to 400
⋒ slice any thick carrots in half lengthwise and then parboil by adding them to boiling water for 5 minutes 
⋒ scoop out with a slotted spoon or tongs 
⋒ place in an oven safe dish (using this small one because it fits in my toaster oven)
⋒ masssaaaagggeeee your carrots with the stoke ghee; it will integrate easily since  the carrots are hot
⋒ add to the oven for 30 minutes (these were FORK TENDER but they could go for another 5-8 minutes depending on your preference!) 
⋒ sprinkle with salt and enjoy!

If you’re going to turn your oven on anyway, you might as well double or triple the recipe, but otherwise this is a great one as the days heat up!
