This simple treat is so satisfying and decadent, yet requires only 10 minutes of active prep time and yields about 15 dates. The vibrant colors of our herbal ghee blends paired with toppings like edible flower petals and flaky sea salt lend this recipe a stunning presentation that you and your guests will love! Served chilled, it's a refreshing and well balanced pick-me-up.

Ingredients:
⋒ 1/2 c chocolate chips or baking chocolate (I love the unsweetened dark and bitter baking chocolate by TCHO; its richness perfectly complements the sweetness of the dates and ghee)
⋒ 12 - 16 dates
⋒ 1/2 - 1 tsp of herbal ghee per date, depending on its size!
⋒ a big pinch of flaky sea salt
Preparation Method:
⋒ add the chocolate to a double boiler or to a pyrex measuring jug with handle balanced over the edge of a pot of boiling water, allow to melt
⋒ meanwhile, remove the pits of your dates, slice lengthwise down the middle, and stuff with your ghee of choice.
⋒ use chopsticks or a fork to dip each stuffed date into the melted chocolate and cover thoroughly
⋒ transfer each date to a baking sheet or plate lined with parchment paper
⋒ freeze for 30 minutes and enjoy! store any leftovers in the fridge for a week
